Rajah Spices Fish Masala Powder 80g

Serves: 4
Preparation Time: 10 minutes + 3 hours marinating
Cooking Time: 30 minutes

What You Need:
20g Rajah Fish Masala spice blend
1 tsp garlic puree
1/2 tsp ginger puree
8 thick pieces of cod, boneless & skinless (or another firm fleshed white fish)
1 tbsp oil
1 onion, diced
1 tomato, diced
1/2 tsp salt

Optional Garnish
2 tbsp coriander leaves, freshly chopped

Method:
1 To make the marinade, place Rajah Fish Masala spice blend in a small bowl. Add garlic and ginger purees and using a teaspoon mix to a paste.
2 Place fish in a shallow dish and spread marinade over the fish, covering evenly. Cover and place in the fridge for 3 hours to marinate.
3 Heat oil in a large frying pan.
4 Add onion and fry for 15 minutes until soft and golden.
5 Add tomato and fry for 5 minutes until softened.
6 Add fish & cook 5 minutes, turning each piece over once.
7 Add 100ml water and salt.
8 Cook on a low heat for 5-10 minutes, until fish is just cooked.
9 Garnish with coriander leaves.
